About the location:
What you will do
Participates in the preparation of food items according to guest orders of consistent quality following recipe cards, as well as production, portion, and presentation standards; set-up station for breakfast, lunch, and/or dinner service.
Start food items that are prepared ahead of time, making sure not prepare beyond estimated needs.
Train, motivate, recommend discipline, and supervise the work of kitchen employees ensuring that all cultural and core standards are met.
Operate, maintain and properly clean kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill.
What you will bring
Minimum five years culinary or related work experience.
A formal education in culinary arts from a reputable institution.
Proficiency in various cooking techniques specific to Western cuisine, such as grilling, roasting, sautéing, and baking, is essential. Knowledge of knife skills and food preparation techniques is also crucial.
Familiarity with Western culinary traditions, ingredients, and dishes is necessary. This includes knowledge of sauces, dressings, and accompaniments commonly used in Western cuisine.
Understanding of food safety standards and proper hygiene practices. A candidate should have knowledge of HACCP guidelines.
The ability to work efficiently under pressure, manage time and manage junior chefs well. Coordinate tasks in a busy kitchen environment.
Junior sous chef is involved in menu development and recipe creation and food cost. Creative thinking and the ability to experiment with flavors and presentations are valuable skills.
Excellent communication skills and the ability to work effectively as part of a team are essential.
Expected to provide guidance and support to junior kitchen staff. Leadership qualities such as decisiveness and problem-solving skills are valuable.
The culinary world is dynamic, and the ability to adapt to new cooking techniques, trends, and ingredients to stay relevant and innovative.
The job can be physically demanding, requiring long hours of standing, lifting heavy pots and pans, and working in hot environments. Good physical stamina is important.
Knowledge of Excel and BirchStreet are essential.
