As a professional in your role, your responsibilities and essential job functions will include but are not limited to:


  • Prepare and cook a range of European Mediterranean dishes, ensuring high standards of quality, flavor, and presentation.
  • Oversee the smooth operation of both All Day Dining and IRD, managing cooking stations such as grill, hot line, cold station, and pastry.
  • Ensure timely preparation and delivery of all dishes according to guest orders, maintaining consistency and quality.
  • Implement daily menu plans, ensuring all dishes are cooked and presented in line with European Mediterranean culinary standards.
  • Monitor and maintain food quality, ensuring consistency across all dishes, from All Day Dining to In-Room Dining, while adhering to portion control and presentation standards.
  • Assist in ensuring that all food prepared is fresh, with appropriate storage, handling, and rotation of ingredients.
  • Supervise and guide kitchen staff, including chefs and kitchen assistants, ensuring they adhere to recipes, techniques, and cleanliness standards.
  • Train and develop junior kitchen staff, fostering a culture of teamwork and efficiency in the kitchen.
  • Provide leadership and support in the absence of the Sous Chef, maintaining a productive and organized kitchen environment.
  • Ensure all food safety, hygiene, and cleanliness standards are maintained within the kitchen.
  • Oversee proper storage and handling of food ingredients, minimizing waste and ensuring compliance with health regulations.
  • Enforce and adhere to health and safety protocols, including the proper sanitization of workstations and kitchen equipment.
  • Work in close coordination with the Sous Chef, Head Chef, and front-of-house staff to ensure a smooth flow of communication and service.
  • Address special dietary requests, allergies, and guest preferences, ensuring that all food orders are fulfilled to the highest standard.
  • Contribute to the overall guest experience by ensuring food quality and timely service
  • Contribute to the development of seasonal and rotating menus, incorporating fresh, local ingredients to enhance the All-Day Dining and IRD offerings.
  • Suggest new Mediterranean European-inspired dishes, based on ingredient availability, market trends, and guest feedback.
  • Ensure the menu reflects the essence of Mediterranean cuisine while incorporating contemporary culinary techniques and trends.

Ideally, you should possess some or all the following qualifications and experience:


  • Proven experience as a Junior Sous Chef or in a similar kitchen leadership role, with experience in both All Day Dining and In-Room Dining settings.
  • Strong knowledge and expertise in European Mediterranean cuisine, with an emphasis on traditional cooking techniques, seasonal ingredients, and regional dishes.
  • Culinary degree or equivalent professional experience preferred.
  • Ability to work efficiently in a fast-paced environment, maintaining a high level of quality and consistency.
  • Exceptional leadership skills with the ability to manage, train, and motivate junior kitchen staff.
  • Strong organizational and time-management skills, with the ability to prioritize tasks and manage kitchen operations during busy service periods.
  • Creative approach to menu development, with a passion for Mediterranean and European culinary traditions.
  • Excellent communication skills, with the ability to collaborate effectively with other kitchen staff and front-of-house teams.
  • Commitment to maintaining a clean, organized, and safe working environment.
  • Flexibility to work varying shifts, including evenings, weekends, and holidays.
  • Strong attention to detail and dedication to maintaining high standards in food quality and presentation.
  • Thorough knowledge of food safety standards, including HACCP guidelines and local health regulations.
  • Ability to stay calm under pressure while leading a team and ensuring a smooth service.
  • A genuine passion for cooking and a desire to contribute to the success of the kitchen and overall guest satisfaction.
