What We’re Looking For


  • A proven track record as an Ice Cream Chef, Pastry Chef, or Gelato Specialist in a Luxury Hotel environment or Artisan ice cream brand, delivering Sensational Experiences synonymous with FIVE's Award-Winning Service Quality.
  • A Culinary or Pastry Degree or equivalent qualification from a Recognised Institution is preferred.
  • Demonstrated proficiency and Strong Knowledge of ice cream production techniques, including Pasteurisation, Emulsification, and Stabiliser use.
  • Understanding of Flavour Pairing, Ingredient Balancing, and Food Chemistry in Frozen Desserts.
  • Extraordinary Creativity and Deep-Seated Passion for the culinary arts, brought to life through Ingenious Dishes and Outstanding Presentation.
  • Robust experience with Ice-Cream Making equipment and ability to Troubleshoot technical issues.
  • Comprehensive knowledge of HACCP (Hazard Analysis and Critical Control Points) principles and practices, and a thorough understanding of Health and Safety Regulations, Food Hygiene Standards, and Best Practices in Restaurant Operations.
  • A Meticulous Eye for Detail, ensuring every aspect of Food Quality and Presentation is perfectly curated.
  • Flexibility to work a variety of shifts, including weekends and holidays, based on the requirements of the Hotel.
  • A hands-on attitude, fuelled by a ‘Can-Do!’ Spirit.

Key Responsibilities


  • Crafts and executes a Curated selection of Luxurious, hand-crafted Ice Creams and Frozen Desserts, ensuring Sensational consistency in Taste, Texture, and Presentation.
  • Innovates with Bold, Boundary-Breaking flavour combinations, Seasonal inspirations, and Premium ingredients to create Award-Winning frozen delights.
  • Develops an Extensive range of Dairy and Non-Dairy alternatives, including exquisite Sorbets and artisan Vegan ice creams, catering to Diverse dietary preferences.
  • Masterfully blends traditional Churning methods with Cutting-Edge techniques to achieve a Superior product that Reflects the ‘Vibe at FIVE.’
  • Stays ahead of Industry Trends by exploring Visionary food innovations, Emerging ingredients, and Evolving flavour profiles to elevate FIVE’s Frozen Dessert offerings.
  • Provides Pioneering insights and Strategic recommendations to Enhance the guest experience, ensuring every Frozen Creation embodies the ‘FIVE-Star’ standard.
  • Oversees the Freezing, Ageing, and Storage processes to maintain the Highest-Quality standards while Preserving the Integrity of each flavour profile.
  • Sources and selects only the Finest, bespoke ingredients, ensuring Every Scoop is infused with Premium quality and Depth of flavour.
  • Maintains Meticulous Portion Control and manages Ingredient Inventory to Optimise cost efficiency while Minimising waste and Upholding Sustainability-Focused practices.
  • Collaborates with the Pastry and Culinary Teams to seamlessly integrate Signature ‘FIVE-Styled’ ice cream Creations into Elevated restaurant menus, Exclusive events, and Curated catering experiences.
  • Adheres to the Strictest Food Safety and Hygiene Regulations throughout the Entire ice cream production process, ensuring Compliance with HACCP and industry best practices.
  • Maintains a Flawlessly Clean and Organised workspace, ensuring Every Step of production aligns with FIVE’s Gold-Standard operational excellence.
  • Monitors and maintains State-Of-The-Art kitchen equipment, including ice cream makers, blast freezers, and pasteurisers, guaranteeing Peak Performance at all times.
  • Trains and mentors the Next Generation of FIVE Tribe kitchen talent, Sharing expertise in Sensational ice cream production techniques and flavour development.
