As a professional in your role, your responsibilities and essential job functions will include but are not limited to:
- Develop and implement hygiene and sanitation policies and procedures for the hotel's culinary department.
- Conduct regular inspections of kitchen areas, food preparation, and storage areas to ensure compliance with hygiene standards.
- Collaborate with kitchen staff to educate and train them on proper hygiene practices, including food handling, storage, and personal hygiene.
- Monitor and enforce adherence to HACCP (Hazard Analysis and Critical Control Points) principles to ensure food safety.
- Investigate and address any hygiene or sanitation issues promptly, taking corrective actions as needed.
- Maintain up-to-date knowledge of local health and safety regulations and ensure compliance within the culinary department.
- Work closely with suppliers to ensure the quality and safety of incoming food products.
- Collaborate with other departments, such as housekeeping and maintenance, to maintain a clean and hygienic overall environment within the hotel.
- Oversee the proper cleaning and sanitization of kitchen equipment and utensils.
- Prepare and submit hygiene reports to management, highlighting areas of improvement and successful compliance.
Ideally, you should possess some or all the following qualifications and experience:
- Bachelor’s degree in culinary arts, Food Science, Hospitality Management, or a related field.
- Proven experience as a Hygiene Officer or a similar role in a hotel or hospitality setting.
- In-depth knowledge of food safety regulations, HACCP principles, and hygiene best practices.
- Strong understanding of kitchen operations, food preparation, and sanitation procedures.
- Excellent communication and training skills to effectively educate and guide kitchen staff.
- Attention to detail and ability to identify potential hygiene risks and areas for improvement.
- Ability to work collaboratively with various departments and external stakeholders.
- Certification in Food Safety and Hygiene is highly desirable.
- Familiarity with local health and safety regulations and the ability to stay informed about updates and changes.
- Strong organizational and problem-solving skills.
- Commitment to maintaining high standards of hygiene and sanitation throughout the culinary department.
