Job Description

Apt Resources is seeking a passionate and dynamic Head of Butchery Production to join our client's team at a leading food production company in the UAE. The ideal candidate will oversee and manage the entire butchery production operations while ensuring adherence to the highest standards of quality and safety.


Job Responsibilities:


  • Manage the Production Shift process to ensure compliance with the food handling and hygiene regulations.
  • Receive and Coordinate inbound orders as well as ensure proper communication with the production team to ensure orders are produced according to the required specification.
  • Ensure acceptable and sustainable levels of productivity in all sections as well as plan and establish work schedules, assignments and production sequences to meet production goals.
  • Train staff in proper meat cutting techniques, portion control, equipment operations and product knowledge.
  • Responsible for HACCP requirements of the butchery department and overall Health/Safety procedures are followed.
  • Carry out risk assessment and hazard spotting within the designated area.
  • Ensure correct labelling information is accurate.
  • Ensure recipe compliance and product consistency.
  • Reduce wastages and stock losses.
  • Communicate daily developments and deviations with the relevant department head and manage production with regards to cold chain as well follow the FIFO procedure.
  • Maintain a harmonious working environment between different levels of employees and management.
  • Maintain and manage staff welfare on a fair and honest basis.
  • Manage and keep records of employee’s attendance and communicate with HR Department.
  • Manage correct color coding system on all levels according to food safety system.
  • Ensure a clean environment and acceptable housekeeping are done within and around the premises.
  • Manage staff clothing, tools and equipment on a controlled recording system.
  • Collect new orders for cooked meat and review outstanding orders from previous day on a daily basis.
  • Prepare spice mix, marinade, brine or sauce according to the recipe per product plus introduction of new recipes
  • Prepare, cut and mix products according to the company standard and recipe as well as strictly adhere to temperature and time specifications.
  • Deliver monthly reports on production, personnel, stock, deliveries, customer returns and new developments as agreed with the Department Head.
  • Take the lead for forecasting budget and managing stock in the entire butchery department.
