Head Butcher

The Head Butcher will manage Hello Chef’s butchery, driving high-quality production and ensuring all meat products meet customer expectations. The role involves leading the butchery team, maintaining inventory, and ensuring strict adherence to food safety standards. The Head Butcher is responsible for achieving measurable quality, efficiency, and customer satisfaction outcomes.


Main Accountabilities:


  1. Meat Preparation and Processing:
    • Ensure 100% of meat products meet portion control and quality standards.
    • Drive customer complaints on butchery products to under 0.25%. 
  2. Inventory and Supplier Management:
    • Maintain optimal stock levels with minimal waste due to overstocking or spoilage.
    • Achieve yield targets, minimising trim waste and maximising usable product from each carcass or cut.
  3. Team Leadership and Development:
    • Improve team productivity through training and performance management, measured by output per person.
  4. Quality Assurance and Compliance:
    • Achieve a 100% compliance rate on all food safety and hygiene audits, with zero non-conformance issues.
    • Maintain accurate and up-to-date HACCP documentation, with audits completed on schedule 100% of the time.
  5. Process Improvement and Innovation:
    • Implement at least 3 process improvements per quarter, aimed at reducing costs or increasing efficiency by 5%.
  6. Portioning of Other Ingredients:
    • Oversee the portioning of non-meat items, including canned goods, dairy, and liquids, ensuring consistent quality and accurate portions.
    • Maintain the same standards of quality, team productivity, and efficiency across all product categories.

  3. Organisational Skills: Meet efficiency targets in stock management, production output, and yield.
  4. Customer Focus: Demonstrate an obsession with gathering, analysing, and acting on customer feedback to improve meat quality.
