Head Butcher - Central Production
Reports to: Executive Chef - Central Kitchen
Job Purpose:
A Head Butcher plays a crucial role in maintaining the high standards of quality and service that is defined by Bateel. This role will oversee the butchery operations, ensuring variety of cuts and presentation of meat/fish products sourced from premium suppliers. Responsible for managing inventory, training staff in accordance with Bateel standards, maintaining cleanliness and hygiene in the butchery area.
Key Accountabilities:
Butchery Operations:
- Expertly prepare and cut meat products to Bateel's specifications and quality standards.
- Utilize sous vide cooking techniques, ensuring critical control points (CCPs) are followed throughout the entire cycle, from cooking to blast chilling and packing.
- Ensure all meat cuts are consistent in size, texture, and appearance.
- Maintain a high level of cleanliness and organization in the butchery area.
Inventory Management:
- Monitor inventory levels and ensure adequate stock of meat/Fish products.
- Place orders with approved suppliers to maintain freshness and quality.
- Minimize waste through efficient stock rotation and careful portioning.
Quality Control:
- Conduct regular inspections of meat products for quality assurance.
- Uphold Bateel's standards for food safety and sanitation.
- Address any quality issues promptly and effectively.
Compliance and Safety:
- Ensure compliance with health, safety, and hygiene standards at all times.
- Maintain records of temperature logs, cleaning schedules, and equipment maintenance.
- Maintain kitchen policies, procedures and service standards.
Staff Training and Supervision:
- Train and supervise butchery staff to ensure they adhere to Bateel's standards and procedures.
- Provide coaching and feedback to enhance performance and skill development.
Administration:
- Keep accurate records of inventory and Production batches.
- Collaborate with other departments to optimize workflow.

Skills
Experience requirement:
- Proven experience as a butcher, with at least 6 years in a supervisory role, preferably in a high-end hospitality environment.
- In-depth knowledge of meat/fish cutting techniques and butchery equipment.
- Strong understanding of all local Food Hygiene and HACCP guidelines as per Dubai Municipality.
- Excellent leadership, communication, and interpersonal skills.
- Ability to work effectively in a fast-paced environment and handle pressure.
Qualification and Licenses requirement:
- High school diploma or equivalent; additional culinary or butchery certifications are a plus.
