Job Overview


The F&B Operations Director leads the operations of all F&B outlets at a site to ensure the implementation of the strategic and business development plans. With a focus on Colleague development and engagement, this role is responsible for the operational and financial success of the department, controlling all operational budgets, and maintaining strong relationships with external and internal partners, thereby ensuring the smooth and efficient operations of all F&B locations. In partnership with the F&B Strategy & Development organization, the F&B Operations Director is responsible for aligning the site's F&B initiatives with the strategic goals of Miral Experiences and Miral asset management and creating a unique, welcoming and positive dining experience for both Guests and Colleagues.


Job Scope


  • Interview and recommend candidates for available positions, adhering to UAE labor law and equal employment opportunity policies
  • Train and develop a dedicated team committed to delivering exceptional guest service
  • Prioritize on-the-job training to cultivate the development of colleagues, with a significant portion of time spend on the floor 
  • Conduct performance appraisals for direct reports and establish development plans to foster growth
  • Develop succession plans for key roles and HiPo colleagues
  • Ensure all F&B locations are covered by the appropriate leadership and a pathway for promotions can be utilized
  • Implement incentive and recognition programs to motivate colleagues effectively
  • Cultivate a positive and helpful team attitude in alignment with Miral’s core values and strategies
  • Create an inclusive and welcoming work environment
  • Participate in company learning and development programs and training sessions
  • Prepare and execute manning plans, operational plans, staffing and scheduling to optimize service and production

Guest Experience – focus on guest satisfaction and quality of service


  • Design efficient procedures to ensure prompt, accurate, and personalized service for high guest satisfaction
  • Monitor food safety and hygiene reports, taking corrective action as needed
  • Adhere to UAE laws, health, safety, and environmental policies for a safe and hygienic environment
  • Listen actively and respond to guest feedback, assess and review guest satisfaction results and trends to continuously improve and exceed guest expectations
  • Enforce leisure facility rules and provide crowd control to ensure guest safety and an enjoyable experience
  • Plan and organize internal and external special events contributing to the company's success
  • Adhere to emergency procedures to ensure guest safety during evacuation

Department Management – focus on quality and consistency of the food


  • Execute the department's business plan to achieve revenue targets and profitability
  • Maintain financial accountability for the F&B outlets, and expense budget control
  • Collaborate with the F&B leadership team to address concerns and enhance financial performance
  • Establish challenging, realistic goals for the department and colleagues
  • Implement and actively review Standard Operating Procedures within the department
  • Monitor operational reports for daily events and intervene as needed
  • Communicate new or amended procedures within the department to keep outlets updated
  • Plan and organize internal and external special events contributing to the company's success

Operational Efficiency – focus on capture and upselling


  • Ensure that departmental revenue and per cap budgets are not only met but exceeded by strategically working to increase capture, average check and units per transaction
  • Track the financial performance of the business through P&L assessments, reporting KPIs, and implementing corrective actions
  • Implement strategies to achieve EBITDA targets through efficient cost control and revenue maximization
  • Plan to enhance and maintain throughput, adapt to levels of attendance to consistently deliver excellence while controlling costs and Colleagues’ motivation
  • Proactively manage the labor budget to optimize efficiency and reduce costs
  • Contribute to achieving department and company objectives, action plans, and key performance indicators

Partnerships – focus on leveraging expertise and synergy


  • Collaborate with F&B Strategy & Development and other support functions on strategic planning, menu development, budgeting, commercialization, standardization, quality assurance, and compliance
  • Collaborate with Marketing & Sales to optimize F&B revenue through marketing, communication, events, and sales initiatives
  • Maintain a line of communication with the Senior Director of F&B Strategy & Development and Senior Executive Chef
  • Represent and promote Miral and the IP in a positive manner to maintain a professional brand image

Financial Performance – focus on fiscal accountability


  • Monitor financial reports and statements to track departmental performance against budgets
  • Manage CAPEX funds for equipment and renovation projects aligned with strategic goals
  • Approve all OPEX and CAPEX expenditures and manage budgets for Food & Beverage operations
  • Responsible for financial accountability, including all F&B outlets, revenue generation, expense budget control, financial planning, budgeting, and Inventory and Purchasing controls
  • Prepare and communicate business cases (Capex and Opex with ROI) forecasts in line with budget requirements
  • Implement strategies to achieve EBITDA targets through efficient cost control and revenue maximization


Job Essentials


  • Bachelor Degree in Business Management or Equivalent
  • Intermediate Food Hygiene and HACCP Certified
  • 8 years’ experience in the food and beverage or related professional area
  • 5 years of Food and Beverage Manager experience
  • High levels of respect and integrity
  • Excellent organizational skills
  • Excellent verbal communication skills
  • Possess a good leadership, customer service and motivational skills
  • A very detail orientated and hardworking team player
  • Good analytical thinking / problem solving
  • Knowledge of Food and Beverage operations
  • Results driven
  • Solid understanding of food production streamlining
  • Have high standards of hospitality
  • Computer and Microsoft Office knowledge
  • Good level of English language
