About the Job:
An opportunity has arisen for a Commis II to join our Culinary Team in Jumeirah Saadiyat Island Resort. The main duties and responsibilities of this role:
- Gathers, measures, mixes, and prepares meal ingredients, sauces, and seasoning
- Wash, peel, and chop vegetables, fruits, and meat etc. as applicable
- Knowledge of cutting and seasoning different meats as and marination
- Prepare basic dishes such as salads and sauces
- Ensure that the food items are stocked properly in refrigerators and freezers
- Follow established recipe and plating guide provided, to exact specification
- Set-up the station with par stocks of menu items and carry out all food preparation tasks given by the Commis 1 | Demi Chef | Chef De Partie designated for that station
- Effectively able to maintain high levels of kitchen assistance service at all times. Keep a track of the inventory supplies
- Continually develops culinary knowledge to produce high-quality meals
- Adept at performing food rotation tasks, in order to ensure ingredient freshness
- Replenishes service lines, restocks, and prepares the workstation for the next shift
- Follow daily ingredient collection, storage of all items used within the respective kitchen and ensure all areas of section are maintained and cleaned following established standards
- Work to the specifications received by the respective culinary team regarding portion size, quantity and quality as laid down in the recipe index
- Attend daily meetings with the Demi Chef | Chef De Partie and other meetings as requested by the Executive chef/Executive sous chef
- Discarding all expired and spoiled food items stored in the stock rooms, refrigerators, and freezers
- Maintain high standard of personal appearance and hygiene
- Develop and maintain positive working relationships with others; support team to reach common goals
- Report problems regarding failure of equipment’s to the Demi Chef | Chef De Partie, follow up and ensure necessary work has been carried out
- Ensure adherence to departmental policies, processes, standard operating procedures, and instructions enabling delivery of luxurious service to guests and in line with Jumeirah standard of excellence
- Adhere to all relevant Health, Safety and Environment procedures, instructions, controls, and audit requirements in compliance with HACAP and Jumeirah standard operating procedures
- Any other duties as may reasonably be requested by the management.
About you:
The ideal candidate for this position will have the following experience and qualifications:
- 1-2 year of experience in a range of kitchen areas; ideally within the luxury hospitality industry and the type of work experience required to be qualified for the job.
- Proven commercial kitchen experience
- College Degree in Culinary Arts or similar from an accredited Culinary School
- Expert in food quality and presentation skills.
- Adaptability and appreciation of cultural diversity
- Team Player with speed, accuracy, and attention to detail
- Reliable and Sincere showing high level of energy
