As a professional in your role, your responsibilities and essential job functions will include but are not limited to:


  •  Prepare and cook European Mediterranean dishes to the highest culinary standards, ensuring consistency and authenticity.
  • Manage a specific kitchen station (such as hot line, cold station, grill, or pastry) within both All Day Dining and In-Room Dining.
  • Ensure all food is prepared in a timely manner, following recipes and presentation guidelines while maintaining excellent quality.
  • Implement and execute the daily menu for All Day Dining and IRD, ensuring food is prepared, cooked, and served on time.
  • Ensure dishes meet the required standards for flavor, presentation, and portion control, consistent with European Mediterranean culinary traditions.
  • Regularly monitor the quality of ingredients and prepared food, maintaining consistency and excellence in every dish.
  • Maintain a clean, organized, and efficient workstation, ensuring all kitchen equipment and utensils are in good condition and ready for service.
  • Take responsibility for mise en place, inventory management, and ensuring stock levels are maintained for your section.
  • Assist in the ordering and stock control of ingredients, ensuring proper rotation to minimize waste and maximize cost control.
  • Work collaboratively with other kitchen staff to ensure a smooth and efficient service, especially during peak hours.
  • Mentor and guide junior kitchen staff, providing training and support as needed to ensure adherence to food quality standards and operational procedures.
  • Communicate effectively with the Sous Chef and Head Chef to ensure coordination between All Day Dining and IRD service.
  • Adhere to food safety and hygiene regulations at all times, ensuring proper food storage, handling, and sanitation in the kitchen.
  • Monitor kitchen cleanliness and ensure that the workstation, equipment, and kitchen environment are regularly cleaned and sanitized.
  • Follow local health and safety standards and ensure compliance with HACCP and other relevant guidelines.
  • Contribute to the development of new menu items, incorporating seasonal Mediterranean European ingredients and flavors.
  • Suggest improvements or innovative dishes that reflect modern trends in European Mediterranean cuisine.
  • Stay updated on culinary trends and techniques to continually enhance the All-Day Dining and IRD offerings.

Ideally, you should possess some or all the following qualifications and experience:


  • Proven experience as a Chef de Partie or in a similar role, preferably with experience in both All Day Dining and In-Room Dining services.
  • Strong knowledge of European Mediterranean cuisine, including traditional and contemporary cooking techniques and regional specialties.
  • Culinary qualification or equivalent professional experience preferred.
  • Excellent organizational skills and the ability to manage time effectively, especially in a high-pressure environment.
  • Strong communication skills, with the ability to work well in a team and interact with front-of-house staff.
  • Passion for food and a commitment to maintaining high culinary standards.
  • Ability to take initiative and work independently, ensuring a smooth and efficient kitchen operation.
  • Ability to work flexible shifts, including evenings, weekends, and holidays.
  • High level of attention to detail, ensuring food quality and presentation is consistently at its best.
  • Strong understanding of food safety, hygiene, and kitchen regulations.
  • Creative approach to menu development, with a keen interest in Mediterranean and European culinary traditions.
  • Ability to multitask and manage multiple responsibilities during service.
