Job Description

  • Assists other members of the kitchen brigade in ensuring that all day to day operational matters are handled on time and guest expectations are met
  • Ensures utensils preparation and presentation in relevant food production area conform to the requisite standards.
  • Ensures that utensils is stored, prepared and secured hygienically and safely
  • Maintains standards of hygiene and cleanliness in all kitchen and related areas        
  • Ensures that mise-en-place and preparation procedures are correctly followed
  • Supervise the duties of all stewarding employees.
  • Supervise the consumption of all chemicals / cleaning supplies on daily basis.
  • Maintain equipment, such as dishwashers, ovens, and refrigerators in good working condition.
  • Ensure that the stewarding department meets all health and safety regulations.
  • Implement cleaning and sanitation procedures without exception.
  • Coordinate with culinary & service team to ensure smooth operations.
  • Control & document all going out equipment and ensure proper receiving upon return.
  • Prepare reports on daily cleaning checklist for review.
     

Qualifications

2 Years experience in Stewarding/Culinary.
