Sous Chef – Cold Kitchen
- Ensure consistency in cold kitchen preparations to maintain quality and adherence to standard recipes.
- Prepare all cold dishes following established recipes, guidelines, and standards set by the Executive Chef or hotel policies.
- Maintain appropriate par levels of supplies and ingredients based on daily production sheets, menus, and banquet events.
- Keep all refrigeration units, equipment, storage areas, and workspaces clean and in proper working condition to comply with health regulations.
- Inspect and select only high-quality ingredients for menu preparations.
- Monitor and control proper product storage, including portion control, particularly for specific meat cuts, to maintain quality.
- Delegate and assist in preparing cold food items such as salads, sushi, cold cuts, and dressings.
- Submit daily requisitions for required supplies and ingredients.
- Prepare dishes according to recipes and portion yield guidelines.
- Properly label and date all products to ensure freshness and sanitation.
- Communicate effectively with chefs and service staff to address guest requests or concerns.
- Plan, prepare, and set up stations to deliver high-quality products for all outlets served by the Garde Manger kitchen.
- Collaborate with the Executive Chef on menu development and banquet menu implementation.
- Monitor waste, minimize overproduction, and ensure proper rotation and quality control of leftover items.
- Stay informed and comply with all departmental policies, procedures, and standards.
- Maintain full knowledge of equipment usage and upkeep.
- Perform general cleaning tasks using standard hotel cleaning products to meet health and safety standards.
- Oversee bulk food production for supported outlets.
- Follow established company controls for food costs, labor efficiency, and quality assurance.
- Assist the Executive Chef in maintaining cleanliness and proper equipment maintenance.
- Support the Executive Sous Chef with weekly and monthly inventories, as well as food and supply orders.
- Assist in developing and refining recipes for Garde Manger and banquet menus.
- Aid in training new employees to help them advance in their roles.
- Support the Executive Chef in enforcing company and departmental safety policies, health regulations, and other applicable standards.
- Attend daily and weekly kitchen meetings to keep staff informed about hotel activities and operational updates.
- Demonstrate strong communication, leadership, and conflict-resolution skills.
- Perform any other job-related duties as assigned by management
Education & Experience:
- Diploma or degree in Culinary Arts or a related field.
- Minimum of 3–5 years of experience in a Garde Manger or cold kitchen role, preferably in a luxury hotel or fine-dining establishment.
