Job Description

Purpose:

The Japanese Sando Bread Specialist will craft authentic, high-quality Japanese milk bread (shokupan) used in our signature fruit sandos. They will uphold Okawa’s commitment to traditional techniques while optimizing production to meet volume demands.

Location: This position is based in Riyadh, Saudi Arabia.

Key Responsibilities:

• Prepare shokupan dough daily using traditional Japanese tangzhong method

• Precisely shape and bake shokupan loaves to meet Okawa’s size and texture standards

• Monitor ingredient inventory, dough production, proofing, and baking to ensure consistent quality

• Slice and package shokupan for use in Okawa’s fruit sando creations

• Maintain immaculate hygiene and organization of the bakery area

• Train junior bakers on shokupan techniques

• Coordinate with procurement on ingredient sourcing

• Recommend process improvements to increase efficiency and reduce waste

• Ensure compliance with all food safety regulations and Okawa policies
