Your Day to Day:
1. Kitchen Operations:
- Assist the Executive Chef in planning and directing food preparation.
- Oversee kitchen operations during the Executive Chef’s absence.
- Supervise the kitchen staff to ensure quality, consistency, and timely delivery of food.
- Ensure all food served meets Hotel Indigo’s standards of quality and presentation.
2. Menu Development:
- Assist in the creation and innovation of seasonal menus, taking into account current culinary trends, guest preferences, and local culture.
- Ensure menus reflect the unique Indigo brand identity, with a focus on local and fresh ingredients.
- Implement food promotions and special events in collaboration with the Executive Chef.
3. Food Safety and Hygiene:
- Maintain a clean and safe work environment according to IHG and local health regulations.
- Ensure proper food storage, rotation, and handling practices are followed.
- Regularly conduct kitchen inspections and ensure compliance with hygiene and safety standards (HACCP or equivalent).
4. Cost Control:
- Monitor food costs, portion control, and waste management to ensure profitability.
- Assist in ordering and inventory management to maintain appropriate stock levels.
- Work closely with suppliers to source fresh, high-quality ingredients.
5. Staff Management and Training:
- Train and mentor kitchen staff to maintain high standards of food preparation, cleanliness, and teamwork.
- Help in recruiting and evaluating kitchen staff, ensuring performance reviews and development plans are in place.
- Ensure the team adheres to all IHG brand standards and local regulations.
6.Guest Experience:
- Engage with guests as needed to ensure feedback is taken into account and incorporated into future menus.
- Work with front-of-house staff to ensure a seamless guest dining experience.
- Address any issues or guest complaints related to food quality, presentation, or service promptly.
7.Collaborative Culture:
- Uphold the Indigo brand’s ethos of celebrating local culture, innovation, and uniqueness in food offerings.
- Collaborate with other departments, such as events and catering, to ensure cohesive service delivery.
- Maintain a positive and cooperative working environment within the kitchen team and across other departments.
