Position Overview
The CDP (Chef de Partie) Cold Kitchen will be responsible for managing and overseeing all aspects of the cold kitchen section, ensuring the highest standards of food preparation and presentation are maintained. This role requires strong culinary skills and creativity to contribute to menu development while ensuring compliance with health and safety regulations.
Job Responsibilities
- Prepare and present high-quality cold dishes including salads, appetizers, and desserts.
- Manage food inventory and ensure freshness of ingredients, minimizing waste.
- Supervise junior kitchen staff and assist in their training to maintain consistency in food preparation.
- Collaborate with the head chef to design and update menu offerings.
- Maintain cleanliness and organization of the cold kitchen area in accordance with health and safety standards.
- Monitor portion sizes and presentation standards to ensure they meet the establishment’s requirements.
- Assist in inventory management and ordering of supplies needed for the cold kitchen.
- Participate in regular kitchen meetings and contribute ideas for operational improvements.
- Ensure compliance with HACCP and other regulatory guidelines related to food safety.

Essential Qualifications
- Proven experience as a CDP or similar role in a cold kitchen setting.
- Comprehensive understanding of various cooking methods, ingredients, equipment, and procedures.
- Knowledge of food safety and sanitation standards.
- Strong leadership and team management skills.
- Ability to work in a fast-paced environment and handle multiple tasks.
- Excellent communication and interpersonal skills.
Desired Experience
- Minimum 2-3 years of experience in a reputable restaurant or food establishment.
- Experience in menu planning and cost control in a cold kitchen environment.
- Previous experience in training and supervising junior staff members.
- Hands-on experience with food preparation and presentation trends.
